Abstract

This study aims to determine the quality of chicken eggs in traditional markets (Sentul Market and Demangan Market) and in modern markets in Yogyakarta City (Manna Kampus Simanjuntak and Pamella 1). This research was conducted from January 19 to March 19, 2024 by taking samples in 2 traditional markets and 2 modern markets in Yogyakarta City. The research material used was 60 chicken eggs. This study used a non-factorial Randomized Complete Group Design (RAKL) consisting of 4 treatments, namely A1 (Demangan Market), A2 (Sentul Market), B1 (Pamella 1) and B2 (Manna Kampus Simanjuntak). The observed variables were egg weight, shell thickness, egg white index, yolk index and haugh unit. Data were analyzed using Analysis of variance (ANOVA), if there were significant differences then further tests were carried out with the DMRT (Duncan Multiple Range Test) test at the 5% level. The results showed that the average egg weights of Demangan Market, Sentul Market, Pamella 1 and Manna Kampus Simanjuntak were 61,23; 69,06; 61,18; and 70,22 g/grain, respectively. Shell thickness was 0,41; 0,40; 0,41; and 0,42 mm. Egg white index was 0,05; 0,03; 0,05; and 0,07. Yolk index was 0,24; 0,31; 0,37; and 0,39. Haugh units were 66,62; 44,96; 65,85; and 76,31. Based on the results of the study, it can be concluded that the evaluation of egg quality in modern markets is relatively similar to that in traditional markets and the quality of eggs is classified as quality I.
